P-P-P-PESTO!
Jazzy enough for you? Pesto is probably my favorite thing. Seriously. It can make any bland sandwich totally delicious. Here are a few clean twists on a classic.
Basil-Cilantro-Almond:
Nutritional Bonus: Almonds are rich in magnesium, vitamin E, and cholesterol-lowering monounsaturated fats.
1/2 cup basil leaves
1/2 cup cilantro leaves
2 tbsp roasted unsalted almonds
1 large clove garlic
3 tbsp extra-virgin olive oil 
Parsley-Walnut-Parmigiano:
Nutritional Bonus: While the addition of parsley adds vitamins K, A and C, the walnuts are an excellent source of omega-3 fats.
1 cup flat-leaf parsley leaves
3 tbsp unsalted walnuts
1 large clove garlic,
3 tbsp extra-virgin olive oil
2 tbsp finely grated Parmigiano-Reggiano cheese
Cilantro-Pumpkin Seed-Manchego:
Nutritional Bonus: Offering manganese, magnesium, phosphorus, and poly- and monounsaturated fats, pumpkin seeds’ most surprising claim to nutrition fame may be their impressive supply of protein!
1 cup cilantro leaves
2 tbsp roasted pumpkin seeds
 1 large clove garlic
3 tbsp extra-virgin olive oil
2 tbsp finely grated manchego cheese

Mediterranean Veggie & Feta Penne

This is a little gem my mother and I cooked up tonight (actually, she went a little crazy. I was only allowed to boil the noodles).

It was really good, and really filling. Now I have some super yummy pasta to take for school lunches (:

Lots of the vegetables can be substituted. The tomatoes are essential, but the greens can be switched with whatever’s available. These snow storms are causing major veggie shortages over here.

a movie theater is a danger zone

If you love movies (like me) and are prone to popcorn cravings (also like me, unfortunately), the movie theater can be a precarious situation! I’ve looked into some healthy movie snack alternatives.

Pop your own popcorn. If you’ve just gotta have it, pop it up at home. You can use your own butter instead of that horrible, carcinogenic, fake movie style butter. I suggest air popping it, it’s my favorite kind of popcorn (:

Veggies! Chop up some vegetables and bring ‘em along. Sugar snap peas, baby carrots, bell peppers…that’s actually what I’m doing today haha. Said vegetables can be accompanied with some cheese cubes or clean veggie dip.

Apple slices with PB. A crowd favorite I’m sure. The protein is filling enough to keep you from noshing on other cheat-foods throughout the flick.

Reduced-fat cheese on whole grain crackers. These will keep your blood sugar at an even keel and hunger at bay. They’re also probably a little less crunchy than the options listed above.

Yogurt. Slip your favorite yogurt into your purse. Sprinkle some low-fat granola or almonds on top for some crunch.

Skip the pop! Bring water or a fresh fruit smoothie instead!

Time for a green moment! I love LunchSkins. Not only are they good for the environment, they’re super cute! (Boys, the also have butch & manly ones with sharks and other boy-ish things. Rawr.) Anyway, I highly suggest checking out their website. They have a whole section about plastic bags. Here are some lovely (not) highlights.

  • Every day 20 million plastic ziplocks go into landfills.
  • Only 1-3% of the plastic bags end up getting recycled.
  • Plastic bags never ever biodegrade; the photodegrade, meaning the sun makes them into teeny pieces.

The price may seem a teeny bit steep for a little bag, but I don’t use plastic ziplocks anymore, ever. So they….what’s the word I’m looking for…make up their worth? Even out? Whatever. They pay off really fast. So use these when you’re packing your yummy clean lunches! (:
